Mediterranean Salad

• Lettuce
• Sliced capsicum
• Feta cheese
• Tomatoes
• Almonds

Dressing

• Dijon mustard
• Balsamic vinegar
• Olive oil
• salt
• garlic

Mix dressing ingredients. Marinade cheese and tomatoes wedges in dressing. Drain dressing from cheese and tomatoes before serving and mix into lettuce and capsicum. Add more dressing to salad if needed. Garnish with almonds.
